Carrot and Coriander Soup Recipe

There’s something really good about the carrot and coriander mix, one complements the other. This soup is quick and easy to make. The great thing about homemade soups is that you know exactly the ingredients.  Some soups in supermarkets have additives in them, which can be unhealthy. Making your own soup is a great way of stocking up for the coming weeks if you make a large batch. Carrots are full of vitamins and minerals.  Rich in vitamin’s K1 and fibre with added benefits of helping with eye health, carrots are must-have in your 5 a day list. Carrots are also linked to lowering your cholesterol levels. Coriander is a member of the superfood herb family, it’s good with curries and used in Thai and Indian food a lot. Coriander is loaded with a full range of health benefits. It’s loaded with Vitamin C, K and healthy protein. It has the advantages of iron and magnesium. Magnesium has lots of biochemical reactions to the body, it helps fight depression, and can be very helpful for type 2 diabetes. Coriander can also help fight off awful migraines.

Prep time 20 minutes

Cooking time 25 minutes

Serves – 4 people


1 tbsp of olive oil

Bunch of fresh coriander

1 x small onion

475g of carrots

1 litre of chicken or vegetable stock

1 x clove of garlic

Salt and pepper


Pour oil into frying pan and onion and fry for 4mins until soft and golden.

Add chopped garlic, and 2 x tbsp of chopped fresh coriander and mix well.

Add 475g of chopped carrots and 1.0 litre of stock, and bring to the boil.

Cook for 20 minutes until carrot and very soft and fully cooked.

Pour into food processor and blitz and then serve in soup bowls some fresh coriander.


Low-Calorie Pea and Mint Soup Recipe!!

The beautiful green colour of this soup is fabulous. It’s easy to make and can be stored in the fridge for the coming week. It’s the perfect lunch or ideal for a partner in his lunch book. Making your own soup is the way to go, it’s a great way to maintain the correct calorie intake if you’re trying to lose weight or maintain a healthy lifestyle. Pea is a great vegetable, either fresh or frozen can be used in this recipe. This soup is a low-calorie lunch. Peas are full of protein, and fibre. They have good amounts of Vitamin C and A. Peas also have a high amount of vitamin K. They also have added benefits for blood sugar levels. Tasty mint is great to add flavour and superfood properties. Mint is known to have great benefits for weight loss because of its digestive advantages. Mint helps boost enzymes that help the body to absorb nutrients from food. The faster your metabolism the better your ability to lose weight.

500 grams of frozen peas

1 litre of chicken or vegetable stock

Teaspoons of olive oil

Two small banana shallots finely sliced

Two garlic cloves finely chopped

Salt and pepper to taste

10 leaves of fresh mint finely chopped

Fresh Parsley for garnish


Heat up the stock in a pan.

In a second pot, pour in the olive oil and shallots and chopped up garlic and cook until the shallot are translucent.

Then add salt and pepper.

Add in the frozen peas and pour in the heated stock and bring to the boil and then simmer for 15 minutes.

Add the fresh mint and put into a blender to liquidize.

Serve in soup bowls with parsley to garnish.


Roast Tomato and Garlic Soup Recipe

This soup will blow the socks off your taste buds, pure and simple! It’s got the added benefits of a member of the superfood family being garlic. The tomatoes roasted bring a more in-depth flavour to the soup, there’s something great about roasts vegetables, its bring vegetables to another level. This soup is low calorie and great if you’re trying to lose some weight. Garlic is full of goodness, it also tastes great and can be used in some many different types of dishes and meals. Garlic has a long history of being used for culinary purposes. It was widely used in Ancient Egypt thousands of years ago.  Tomatoes are a great source of vitamin K and C and help to lower the risk of heart disease. Balsamic vinegar is good for you because of its antimicrobial compounds and antioxidant properties. It helps with blood sugars levels and can be used to treat open wounds. Balsamic vinegar helps with congestion problems also. This soup is full of health benefits and I’d give it a healthy 8 out ‘a 10 on the taste scale. You have to try it!!!

850g of fresh tomatoes

 1 bulb of garlic

1 tbsp of balsamic vinegar

Salt and pepper

One stalk of celery

One small onion

One small carrot

1 tbsp of olive oil

750 MLS of chicken stock

Tomato puree


Slice tomatoes in quarter chucks and season with salt and pepper and place in an oven roasting tray, set the oven to 200c/180c fan/gas mark 6, set the oven timer for 40 minutes. Roast until garlic is soft and tender and tomatoes are caramelized and soft and sweet. Pour olive oil into a frying pan, dice carrot and celery and onion and add to olive oil in the frying pan with some salt and pepper. Cook until tender. Add in roasted tomatoes and garlic from the oven dish and chicken stock and cook for 30 minutes on a medium heat. Pour into a food processor and blitz until smooth. Serve with soup bowls with fresh brown whole wheat brown bread and watercress. This is a great low-calorie soup and can help you lose weight.

Tomato and Mussels with Chilli Soup Recipe 

This soup recipe rocks all the way to the ocean. The flavour from the mussels adds a depth of flavour that only magical mussels can bring to a soup. This combination of tomato, mussels and chill is a truly delicious soup. The health benefits are good also. Tomatoes have many benefits, including vitamin C. Mussels, on the other hand, are a food that has to be included in your diet with the added benefits of zinc, vitamin A and B12 and rich in iron. Mussels are also low calories and low in fat. Chills are full of good stuff, vitamins C, B6, K1 and A. Chilli also have the added benefits’ of copper essential for strong bones and potassium. Chillies have good metabolism benefits and can provide joint pain relief. Chillies have positive benefits for cognitive functions also. Yellow peppers are full of vitamin C and vitamin A and are a good source of fibre. They have the benefits of containing iron also. This soup is full of healthy ingredients and is also low in calories.

850g of fresh tomatoes

200 g of cherry tomatoes

1 cup of mussels taken out of shells

1 small red chilli

Salt and pepper

One stalk of celery

¼ cup of yellow pepper

1 tbsp of olive oil

750 MLS of chicken stock

1 x tablespoon of green pesto.


Slice and dice both vine and cherry tomatoes and season with salt and pepper. Chop up and dice celery and yellow pepper.

Cut up red chill with a sharp knife.

Pour olive oil into the frying pan and add tomatoes and yellow pepper and celery.

Cook for 10 minutes until soft and until tomatoes are broken down and celery and peppers are cooked.

Season with salt and pepper.

Blitz mixture in a blender for 60 seconds and add back into a large pot.

Add in red chilli and chicken stock and mussels and cook for 10 minutes.

Serve in small soup bowls with green pesto.


Tiger Prawn and Enoki Mushroom Soup Recipe 

This soup is fabulous and easy to make. It’s full of tasty indigents and healthy stuff. It takes the pressure off by making it really easy to put together if you need some real good real fast! Tiger prawns cook really quickly and are low in calories. Seafood is a great option when trying to maintain a healthy calorie daily target. They can also be cooked from frozen which can be very handy.  Prawns or shrimp as they are known in the US, are full of protein, and contain very little fat, and low also in carbohydrates. Prawns have a good amount of antioxidants to help boost the body’s ability to maintain healthy cells. Prawns contain good amounts of zinc which is an immune system booster. Consuming prawns helps to maintain strong bones due to amounts of copper, magnesium and phosphorous contained in this tasty seafood. Mushrooms are also very good for the body. Enoki Mushrooms have lots of benefits, they have vitamins B2, B1, B3 and B5. Enoki mushrooms also contain iron, calcium, copper and selenium.  These little mushrooms have the benefits of amino acids and are low in cholesterol.  The superfood garlic also has many good properties including not only smelling wonderful and tasting lovely. Garlic boosts the immune system and helps to improve cardiovascular health, improving cholesterol. It also has anti-inflammatory properties.

1000 ml of water 

1 tin of Campbells cream of mushroom soup 

350grms of tiger prawns 

2 x cloves of garlic 

Salt and pepper 

200grams of Enoki Mushroom 

3 x tablespoons of fresh chives 


Put the water and can of Campbells cream of mushroom soup into a small saucepan, and bring to the boil. 

Cut stems off Enoki mushrooms 

Chop fresh chives into small pieces 

Add in 350 grams of tiger prawns, and garlic and Enoki mushroom and simmer for 12 minutes. 

Season with salt and pepper and add in chopped fresh chives  

Serve in small soup bowls
