Serves – 4 people
1 tbsp of olive oil
Bunch of fresh coriander
1 x small onion
475g of carrots
1 litre of chicken or vegetable stock
1 x clove of garlic
Salt and pepper
Pour oil into frying pan and onion and fry for 4mins until soft and golden.
Add chopped garlic, and 2 x tbsp of chopper fresh coriander and mix well.
Add 475g of chopped carrots and 1.0 litre of stock, and bring to the boil.
Cook for 20 minutes until carrot and very soft and fully cooked.
Pour into food processor and blitz and then serve in soup bowls some fresh coriander on top.
